Recipe: Thanksgiving Dinner Casserole

Thanksgiving Dinner Casserole

YIELD: 8 Servings
INGREDIENTS:
5 cups shredded cooked turkey (light or dark meat) Rotisserie Turkey is good for this recipe!
1 can condensed cream of mushroom soup
1 cup sour cream ( or Greek yogurt)
1 can green beans, drained (or 15 oz frozen)
1/2 onion, finely diced ( or a pack of frozen pearl onions)
1/2 tsp salt
1/4 tsp pepper
2 cups shredded cheddar cheese (or cheese of choice- I like Swiss)
4 cups prepared mashed potatoes ( regular or sweet)
1 pkg stuffing mix, prepared (or about 4 cups leftover stuffing) or French fried onions
INSTRUCTIONS:
1. Spray 9x13 baking dish or aluminum pan lightly with cooking spray. Spread shredded turkey in bottom of dish.
2. In medium-sized bowl, combine soup, sour cream, green beans, onion, salt and pepper. Spread mixture evenly over shredded turkey.
3. Sprinkle shredded cheese over soup mixture.
4. Spread mashed potatoes over cheese layer. (You may need to heat up the pototoes or thin them with a little bit of milk to make them spread easier.)
5. Top with a layer of prepared stuffing mix or leftover stuffing.
If freezing:
6. Cover with aluminum foil or lid. Label and date, then place in freezer.
To reheat:
1. Bake uncovered at 350 degrees Fahrenheit for 35-40 minutes until bubbly and topping is lightly browned.
2. Garnish with crushed fresh sage or thyme and a dollop of cranberry sauce!
