Fiesta Sloppy Joes
Ingredients
1-1/2 pounds lean ground beef (or use vegetarian substitute like Beyond Burger)
1 green pepper-diced ( or use poblano or jalapeño)
1 (small) sweet onion-diced
2 cloves garlic-minced
2 (10 oz ) cans mild red enchilada sauce (or spicy if you prefer)
1 packet taco seasoning mix
1-2 TBSP brown sugar (optional)
8-10 soft flour tortillas OR favorite soft rolls
Cotija cheese-crumbled
Radishes-slices
Fresh Cilantro
Avocado-sliced (use lime juice to keep from browning)
Sour Cream (optional)
Directions
Heat large cast iron skillet to medium heat, add tablespoon canola or vegetable oil.
Add ground beef or meat substitute and cook for 5 minutes, using potato masher to crumble as meat cooks.
Add diced onion and peppers to meat and sauté another 10 minutes, then add garlic and sauté for one minute. If there is excess grease, carefully blot with a few paper towels to soak up, then discard them.
Add taco seasonings and cook one more minute.
Add enchilada sauce and simmer for ten minutes or so to thicken a bit (if you want to mimic sweetness of traditional Sloppy Joes, you can add 1-2 tablespoon of brown sugar at this time.
Serve on warm tortillas or rolls and top with any favorite toppings like: Cotija cheese, radishes, avocado, cilantro and sour cream. Olé!
