Recipe: Fiesta Joe's

Fiesta Sloppy Joes

Ingredients

  • 1-1/2 pounds lean ground beef (or use vegetarian substitute like Beyond Burger)

  • 1 green pepper-diced ( or use poblano or jalapeño)

  • 1 (small) sweet onion-diced

  • 2 cloves garlic-minced

  • 2 (10 oz ) cans mild red enchilada sauce (or spicy if you prefer)

  • 1 packet taco seasoning mix

  • 1-2 TBSP brown sugar (optional)

  • 8-10 soft flour tortillas OR favorite soft rolls

  • Cotija cheese-crumbled

  • Radishes-slices

  • Fresh Cilantro

  • Avocado-sliced (use lime juice to keep from browning)

  • Sour Cream (optional)

Directions

  • Heat large cast iron skillet to medium heat, add tablespoon canola or vegetable oil.

  • Add ground beef or meat substitute and cook for 5 minutes, using potato masher to crumble as meat cooks.

  • Add diced onion and peppers to meat and sauté another 10 minutes, then add garlic and sauté for one minute. If there is excess grease, carefully blot with a few paper towels to soak up, then discard them.

  • Add taco seasonings and cook one more minute.

  • Add enchilada sauce and simmer for ten minutes or so to thicken a bit (if you want to mimic sweetness of traditional Sloppy Joes, you can add 1-2 tablespoon of brown sugar at this time.

  • Serve on warm tortillas or rolls and top with any favorite toppings like: Cotija cheese, radishes, avocado, cilantro and sour cream. Olé!
