Recipe: Baked Omelette Roll
Chef Jill Aker-Ray has a spin on a classic breakfast meal. She joins Good Day Charlotte on FOX 46 to make her recipe for a Baked Omelette Roll.
Ingredients
6 large eggs
1 cup whole milk or 1/2 and 1/2
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
Additional dried herbs or seasonings ( optional)
1-2 cups cheese and any vegetables or meats
Directions
Place eggs and milk in a blender. Add the flour, salt and pepper; cover and process until smooth. Pour into a well greased 11 x 17 jelly roll pan covered with parchment.
Bake at 400 degrees until eggs are set, about 10 minutes.
Sprinkle with cheese and toppings . Roll up omelet in pan using parchment lengthwise to make most servings.
Turn oven down to 350 degrees and place omelette back in oven for 5 minutes to melt cheese.
Place with seam side down on a serving platter. Cut into 3/4-in. slices. If desired, sprinkle with green onions or other herbs. Serve with fresh fruit.
