Tips: Cooking with Cast Iron

Skillet Cornbread

Ingredients

  • 2 boxes Jiffy cornbread mix

  • 1/2 cup milk or buttermilk

  • 1/2 cup sour cream

  • 3 Tablespoons honey

  • 2 eggs

  • 1/4 cup butter (to melt in skillet)

  • Diced jalapeños, green chiles and cheddar-optional

Instructions

  • Preheat the oven to 375 degrees. Prepare  a skillet by preheating it in oven, then add butter to skillet  and melt it in the oven. Meanwhile, mix together the cornbread mix, milk, sour cream, honey and eggs. Pour into your prepared pan.

  • Bake for 25-32 minutes, until fairly form to the touch and golden brown. Remove from oven and let cool 5 minutes, then run knife around edge and carefully invert onto a cutting board and slice to serve.
